Vanilla Muffins

I love to wake up to the smell of something good going on in the kitchen! And this morning I created just that very thing for my family!

I baked up a batch of Vanilla Muffins, and they are so good, sweet and great with a cup of coffee or a glass of milk.

I picked up these cute Christmas paper liners at the Dollar Tree.



Here's the recipe for Vanilla Muffins.

3/4 cup sugar

1 egg
1 1/2 cups unbleached four
2 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
1/4 cup extra virgin olive oil
3/4 cup milk
1 tsp vanilla

Preheat oven to 375 degrees


Mix the sugar with the egg. Add the extra virgin olive oil, milk and vanilla.


Mix the flour, baking powder, salt and cinnamon and make a well in the center.


Pour the liquid ingredients into the dry ingredients; stir to mix, about 20 times.


Divide the batter into twelve muffin cups.


Place in the oven and turn the temperature up to 400 degrees.


Bake 12 to 15 minutes.

A Very Simple Meal

We had a bunch of days of a lot of eating! Thanksgiving dinner was at our house, so we didn't just start to eat on Thursday, but rather on Tuesday of this last week! We've been celebrating Thanksgiving for close to a week now. Last night we had a humble dinner of the last of our feast. I was glad to eat such a simple dinner. We had left over bread rolls with some gravy that I made. Can't be much more simple than that!









Sometimes I like to eat my supper on a small plate. And I like lots of black pepper. After days of eating, and over eating, it's nice to have a simple, and adequate meal. I am thankful for simple food. I am thankful for my warm home. ~Violet~

Peppermint Mocha

Oh yeah, we are definitely coffee drinkers and coffee lovers around here! Through our Pinterest exploits we found a site for homemade coffee creamers. And the good thing about the recipes from this site is that they use good quality ingredients.


This afternoon Lacey made peppermint mocha creamer using milk, cream, maple syrup, cacao and peppermint extract. Delicious! We whipped up some of the heavy cream for our mocha's but it mostly melted into the coffee before I was able to take photos.
